These coconut milk pancakes are quick and easy to make. The pancake mix mixes up in a flash and without fancy equipment or techniques. Simply add the wet ingredients to the dry ingredients and mix until a pancake mix is formed.

The pancakes in this recipe are dairy-free and easy to make and gluten-free! Simply replace regular flour with a gluten-free one and voila, you now have an even healthier, but equally delicious alternative.

The ingredients are healthier than those in a regular pancake. No white sugar, cow's milk or vegetable oil is needed for these pancakes.

They are suitable for consumption by people who should not consume lactose and also for vegans. But the truth is that they are so delicious that everyone will enjoy them, even people without specific dietary requirements and needs.

Pancakes with coconut milk - ingredients needed

To make these mouth-watering coconut milk pancakes, you need the following ingredients. Substitute with gluten-free baking flour to make them a gluten-free version of pancakes if you desire.


Coconut milk - thins the batter and makes it smooth. Use canned coconut milk for this recipe. Coconut oil - helps the pancake stay juicy without weighing it down.

Maple syrup - adds a slight hint of sweetness. If you can't find maple syrup, or you just don't like the taste, you can substitute it with agave syrup or honey of your choice.

Pancakes with coconut milk - preparation

To make these delicious and tempting pancakes, start by mixing the dry ingredients in a clean and dry bowl. The dry ingredients for this pancake recipe include two hundred grams of flour of your choice, two teaspoons of baking soda and ¼ teaspoon of salt.

In a separate bowl, mix all the liquid ingredients which are two hundred milliliters of coconut milk, one beaten egg, one teaspoon of coconut oil and two teaspoons of maple syrup or agave syrup or honey.


Once you have a homogeneous mixture, simply pour the wet ingredients at the dry mixture and mix well. Again, you should stir until you have a homogeneous and smooth pancake mixture.

Then proceed to frying the pancakes. It is recommended to fry them in well heated coconut oil to make them as healthy as possible. Since the pancake mix is quite fluffy and light, it is recommended that you make them in a small American style size instead of the traditional large and thin pancake that we are well known for in Bulgaria.

Each side of the pancake usually takes up to three minutes to be ready. You can then top the pancakes to your taste with sweet and savoury items and toppings.

You can use more liquid coconut milk from a carton for this recipe, but the pancakes won't be as fluffy and may fall apart. That's why using a thicker and creamier coconut milk from a can is recommended.

Make sure the pan is not too hot or the underside of the pancake will burn before the inside is cooked. Start on medium heat, but if the underside of the pancake browns too much, turn the heat down a bit.
