It is also sweeter and has a rich natural floral aroma. Ordinary honey has a lower consistency. It ripens at 38-40 degrees, has a lower sweetness and a lighter floral aroma.

Nutritional value

The complex nutritional index of fructose, glucose, vitamins, hormones, amino acids, enzymes and esters of organic honey is higher than that of regular honey.

Its total fructose and glucose content is higher than 70 %. In addition to being sweeter and more flavourful, organic honey has a higher nutritional value.

As conventional honey matures at a lower temperature, it fails to reach its natural maturity. As a result, many of its nutrients are incomplete and unstable.

Honey often has to be dehydrated and machine concentrated before it can be sold. It has no real nutritional value as honey should. At the same time, honey concentrate may have a longer shelf life, but it loses the strong flavour of natural mature honey.

Shelf life

Naturally ripened organic honey has a lower water content than regular honey, crystallises more easily and quickly, has whiter crystals and a longer shelf life. The shelf life of organic honey without dehydration and less concentrated is usually about one year.
